Gyoza Ochi is run by Mr. Ochi, who has appeared in numerous media outlets and won first place titles.
The filling is made by kneading back fat, a feature of ramen shops, and seasoning it with carefully selected soy sauce and other seasonings.
We grind raw blocks of meat purchased from the Asahi Meat Cooperative in Chiba at our factory.
The dough is made from a high-hydration dough blended with wheat flour from Asakusa Kaikaro, a prestigious noodle shop in the east.
